This Spanish variety is well suited to the northern Barossa region. Rojomoma add complexity to this variety by picking and treating parcels of the fruit that goes into the wine differently. They spread out the picking time such that some of the fruit is picked in early January and spread out on racks to allow further concentration of the red fruits plus allow the tannins to continue to develop, a second parcel is picked a couple of weeks later, and includes whole bunches and then a third parcel when the fruit has fully ripened on the vines.
The result is layers of interesting ripe flavours, with bright lifted cherry flavours and a savoury long finish. The initial nose has a hint of charcuterie that is matched by the savoury, earthy palate.
This is a delicious medium-bodied wine with fine tannins.
