Tim's approach to winemaking is accessing great vineyards, timely picking, a light hand in the winery and having a sensibility for tradition. He is heavily influenced by the wines of the Rhone Valley, but with a very healthy respect for the regional Barossa wine style. Mataro is a Rhone variety usually used in GSM blends in the Barossa.
Tim loves Mataro and sources his fruit from three very old vineyards from the floor of the Barossa Valley, with the youngest being 80-years old and the oldest around 150-years old.
The single most important factor in the success of this wine is when to pick.
The Mataro is aged in older French barrels-usually 500-litre puncheons to slow down the maturation and decrease the oak influence.
The result is a fabulous balance of black fruit, licorice and spice with lifted tannins. Just like black forest cake.
