This Cabernet demonstrates that there is more to the Barossa than just Shiraz. The fruit was sourced from family vineyards largely on the rich soils along the banks of the Para River. Cabernet is picked on richness and depth of flavour then the best barrels are selected from three different vineyards. Open fermented for 7 days then basket press to oak for 21 months 100% French oak.
This elegant Cabernet is drinking beautifully now but will reward those who let it dwell in their cellar beyond ten years.
