Tim's winemaking style is heavily influenced by his time spent doing vintages in the French Rhone region.
In this slight twist on the popular Rhone-style blend GSM, Tim makes his beloved Mataro the dominant variety in the blend. Tim says that "when fashioned in this style, we’re not only ripping off the classic Southern Rhone Provence style of wine, we’re also crafting a wine that has structure, persistence, and ageing capacity".
With Tim's strong preference for old vineyards, The backbone Mataro vineyard is 150-years old. Given the phylloxera devastation to the European vineyards in the 19th century, this could be amongst the oldest Mataro vineyards in the world. The average age of all the vineyards is 85-years.
The Mataro fruit gives the wine a bright colour and tannins that enable it to age well.
The wine is dark purple in colour with dark fruit, spice and licorice flavour.
